OUR PHYLOSOPHY

We proudly serve meticulously selected local fresh ingredients, prepared with traditional Japanese techniques.

At Niigata Nihonbashi, our skilled chef utilizes their extensive knowledge and experience to carefully select the finest ingredients from Niigata Prefecture. Please enjoy the freshest local seasonal ingredients.

The only rice we use is “Koshihikari from Iwafune area.” After trying all types of rice produced in Niigata, we concluded that this is most suitable for our sushi.

Additionally, we are deeply committed to freshness, as shown by practices such as grating wasabi just before preparing the sushi.

The restaurant is filled with a warm atmosphere. Our counter features a single slab of Akita cedar, and we use special pottery crafted exclusively for us by Niigata artisans.

Sushi chef (itamae) who continues to pursue the highest standards of Japanese cuisine will deliver the freshest seasonal delights.

Originally worked at a patisserie and spent his days in pastry making. The owner of Niigata Nihonbashi, Watanabe, has a unique background and is personality driven by the pursuit of ‘how much he can personally express within such small sizes,’

After a long journey, his inquisitiveness led him to the ultimate form of Japanese cuisine “sushi”.

Continuing to aim for the highest standards in sushi, he remains dedicated to further exploration and improvement.

With an unconventional approach, he creates various dishes that truly satisfy all five senses of our guests.
